Ingredients

200g Pasta (spaghetti, penne, or your preference)

4 ripe Tomatoes, diced

2 cloves Garlic, minced

1/4 cup Fresh basil leaves, chopped

3 tabs Olive oil

Salt and black pepper, to taste

Grated Parmesan cheese, for garnish (optional)

 

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, dice the tomatoes and set them aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1-2 minutes, or until fragrant.
  4. Add the diced tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  5. Add the cooked pasta to the skillet with the tomato mixture. Toss gently to combine, ensuring the pasta is well coated with the tomato sauce.
  6. Stir in the chopped basil leaves. Season with salt and black pepper to taste.
  7. Plate the pasta and tomatoes. If desired, garnish with grated Parmesan cheese.
