Its balanced heat and deep colour enhance the natural taste of seafood while giving an appetising crust. For use, mix 2–3 teaspoons of the masala with lemon juice and a little water to form a thick paste; add salt if needed. Coat cleaned fish pieces evenly, rest for 15–30 minutes, and shallow- or deep-fry on medium heat until golden and cooked through, turning once. Drain on paper to remove excess oil and serve hot.
