Shallots bring a mild, sweet onion flavour that enhances sauces, sautés, roasts, salads, and dressings. Peel and trim the ends, then slice, dice, or leave whole depending on the recipe. Sauté in a little oil until translucent for 3–5 minutes, caramelise slowly on low heat for 15–20 minutes, or roast whole at 180°C for 20–25 minutes until tender and golden. For raw use, finely slice and briefly soak in cold water to soften their bite before tossing into vinaigrettes, relishes, and fresh salsas.
