Dubai Pumpkin is a sweet, nutty-fleshed vegetable prized for its smooth texture and vibrant orange colour. Ideal for roasting, soups, curries and purées, it delivers comforting flavour and natural richness in everyday cooking. For preparation, rinse, peel with a vegetable peeler, trim the ends, halve lengthways and scoop out the seeds. Cut into cubes or slices. Roast with a drizzle of oil, salt and pepper at 200°C for 25–35 minutes until caramelised and tender, or steam/boil until soft for mashing and blending into sauces or soups.
