It has a pale cream colour and develops a nutty aroma when lightly roasted. For upma, dry‑roast the semolina until fragrant, sauté spices and vegetables in oil, add water and salt, then stream in the semolina while stirring and cook covered until fluffy. For halwa, toast with ghee, pour in hot sugar syrup, and cook, stirring to a glossy finish. It can also be blended into dosa and idli batters for texture.
