Rinse thoroughly, trim the ends, and slice lengthways or into rounds. Heat oil, temper mustard seeds and curry leaves, then add onions, tomato, turmeric, chilli, and coriander powder before stirring in the sliced tindora. Sauté or braise until tender yet firm, seasoning with salt to taste. It can also be added to dal or lightly stir-fried with garlic for a quick side.
