To prepare, rinse thoroughly in plenty of water to remove soil, trim any tough ends, and chop to your preferred size. For a simple method, blanch in boiling water for 2–3 minutes, drain well, then sauté with oil, garlic, chilli, and salt for 5–7 minutes until just tender. Alternatively, add the chopped greens near the end of simmering curries to retain their colour and texture.
