To prepare, remove any wilted outer leaves, rinse thoroughly, quarter and remove the core, then slice or shred. For fast cooking, stir-fry in hot oil for 3–5 minutes and season. For boiling, add to lightly salted water and simmer 5–7 minutes until tender-crisp, then drain. For raw dishes, dress and serve immediately for best crunch.
