GARLIC PICKLE

Ingredients

 

1 cup Garlic cloves, peeled

2 tabs Mustard seeds

2 tabs Fenugreek seeds

1 tabs Kashmiri red chili powder (adjust to taste)

1 tabs Turmeric powder

1 tabs Salt (adjust to taste)

1/4 cup Lemon juice

1/4 cup Oil (preferably mustard oil)

 

Method

 

  1. Heat a small skillet over low heat. Dry roast the mustard seeds and fenugreek seeds until they turn slightly darker and release their aroma. Remove from heat and let them cool.
  2. Grind the roasted mustard seeds and fenugreek seeds into a fine powder using a spice grinder or mortar and pestle.
  3. In a mixing bowl, combine the garlic cloves, mustard-fenugreek powder, Kashmiri red chili powder, turmeric powder, salt, lemon juice, and oil. Mix well until all the ingredients are evenly coated.
  4. Transfer the garlic mixture to a clean, sterilized jar. Press down the garlic cloves firmly to remove any air pockets.
  5. Seal the jar tightly with a lid and store it in a cool, dark place for at least 5-7 days to allow the flavors to develop. Shake the jar gently every day to distribute the spices and flavors.
  6. After the initial fermentation period, transfer the jar to the refrigerator for longer storage. The garlic pickles will continue to develop their flavors over time and can be enjoyed for several months.
