CHICKEN TIKKA MASALA
Chicken Tikka Masala is a popular Indian dish that's loved by many people around the world. Here's a recipe to make it at home:
Ingredients
1 kg Boneless, skinless chicken breasts, cut into bite-sized pieces1 cup Plain yogurt
2 tbsp Lemon juice
1 tbsp Ground cumin
1 tbsp Paprika
1 tbsp Garam masala
1 tsp Turmeric
1 tsp Salt
1/2 tsp Cayenne pepper
2 tbsp Butter
1 Onion, chopped
3 cloves Garlic, minced
1 tbsp Grated fresh ginger
1 can Tomatoes, diced
1 cup heavy cream
Fresh cilantro, chopped, for garnish
Cooked rice, for serving
Method
- In a large bowl, whisk together the yogurt, lemon juice, cumin, paprika, garam masala, turmeric, salt, and cayenne pepper. Add the chicken pieces and stir to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat the oven to 400°F. Line a baking sheet with foil and place the chicken pieces on the sheet. Bake for 20-25 minutes, or until cooked through.
- Meanwhile, melt the butter in a large skillet over medium heat. Add the onion and cook for 5-7 minutes, or until softened. Add the garlic and ginger and cook for another minute, or until fragrant.
- Stir in the diced tomatoes and cook for 5-7 minutes, or until the mixture has thickened slightly. Stir in the heavy cream and bring to a simmer.
- Add the cooked chicken pieces to the skillet and simmer for 5-10 minutes, or until the sauce has thickened and the chicken is heated through.
- Serve the chicken tikka masala over cooked rice and garnish with fresh cilantro, if desired. Enjoy!
DAHI BHINDI (OKRA IN YOGURT SAUCE)
Ingredients
250g Okra (bhindi), chopped1 cup Yogurt
1/2 cup chopped Onions
2-3 Garlic cloves, minced
1 tsp Cumin seeds
1 tsp Coriander powder
1/2 tsp Turmeric powder
1/2 tsp Red chili powder
Salt, to taste
2 tbsp Oil
Method
- In a pan, heat oil and add cumin seeds. Let them splutter.
- Add onions and garlic and sauté until the onions turn translucent.
- Add chopped okra and sauté for a few minutes until they are slightly tender.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute.
- Beat the yogurt and add it to the pan. Mix well and cook for 5-7 minutes until the okra is cooked and the yogurt is heated through.
- Serve hot with roti or rice.
