INGREDIENTS:
1 cup Black or White Sesame Seeds (ellu)
¾ cup Jaggery (grated)
2–3 tbsp Water
2 tbsp Grated Coconut (optional)
½ tsp Cardamom Powder

INSTRUCTIONS:
1. Roast the Sesame Seeds
Dry roast the sesame seeds on low flame until they start to pop and release a nutty aroma. Let them cool.

2. Grind the Sesame
Coarsely grind the roasted sesame seeds. Do not over-grind into a paste.

3. Prepare Jaggery Syrup
In a pan, add jaggery and water. Heat until the jaggery melts and forms a slightly thick syrup.

4. Mix Ingredients
Add the ground sesame seeds, coconut (if using), and cardamom powder into the jaggery syrup. Mix well.

5. Shape the Punnakku
While the mixture is still warm, take small portions and shape them into balls or press into small flat discs.

6. Cool & Serve
Allow them to cool and firm up. Your healthy Ellu Punnakku is ready to enjoy!
