THAI PONGAL SPECIAL RECIPE

Sakkarai Pongal is a family favourite to enjoy during Thai Pongal. There are different ways of preparing this dish and it is generally offered as a tribute or token of gratitude and worship to the Sun God Surya as "Naivedyam" in many South Indian houses during pooja.

Here’s how you can make this deliciously sweet surprise for your family, friends and relatives.

SAKKARAI PONGAL

Cook Time: 45 mins
Servings - 6

A traditional South Indian Sakkarai Pongal Platter

INGREDIENTS

300g red rice
25g yellow mung dal
2 cups powdered jaggery
400ml coconut milk
600ml water
6-8 green cardamom
50g cashew nuts
4 tbsp ghee

METHOD

Mix the rice and mung dal.
Wash the rice and mung dal then add it to a pot.
Add water.
Stir on high heat until the rice is half cooked.
In a separate pan add 1tbsp ghee and roast cashews and sultanas.
Grind the green cardamom into powder.
Once the rice is cooked add the coconut milk, powdered jaggery and mix well.
Check the rice is ¾ cooked.
Add 1tsp ghee and stir.
Add rest of the ghee and mix well.
Reduce to low heat.
Add the cashews and sultanas.
Sprinkle cardamom powder.
Mix well.
Serve hot on a banana leaf or ornate dish.
