EASY CARROT HUMMUS

Smooth, creamy and gently smoky carrot hummus

Ingredients

1 cup Chickpea
1 cup Carrots, roughly chopped
1 tabs Vinegar, or lemon juice
2 tsp Garlic powder
½ tsp Ground cumin
½ tsp Turmeric
1 tsp Dried basil
1 tabs Tamari
2 tabs Peanut butter
4 tabs Water, for desired consistency
2 tabs Olive oil to drizzle on top

 

Method 

  1. Steam or boil the carrots until soft. You could roast them too.
  2. Drain the chickpeas over a bowl to collect the chickpea water.
  3. Add the carrots and chickpeas, plus 2 tabs of the chickpea water, to a blender along with all the other ingredients.
  4. Blend for a few minutes until thick and creamy. You may need to scrape the sides down occasionally.
  5. Serve with vegetables or spread onto toasted sourdough.

DAIRY FREE CHOCOLATE PEANUT BUTTER ICE CREAM

Dairy-free chocolate peanut butter ice cream

Ingredients

4 medium Bananas, sliced and frozen
½ cup Unsweetened non-dairy milk
¼ cup Peanut butter
3 tabs Cocoa powder

 

Method

  1. In a blender, combine coconut milk with the nut butter, cup of the maple syrup, vanilla and salt.
  2. Blend until very smooth, then pour the peanut butter mixture into a measuring cup and leave the rest in the blender.
  3. Add in the remaining maple syrup, and the cacao powder. Blend until very smooth.
  4. Pour the chocolate mixture into a medium loaf pan (4” x 8”), then swirl in the peanut butter mixture and chopped chocolate bar.
  5. Cover tightly and freeze at least 4-6 hours. To scoop, allow the ice cream to sit at room temperature to defrost a bit. Enjoy!

PEANUT BUTTER RICE CRISPY FOR TREATS

Delicious square that is made with rice cereal, melted marshmallows, peanut butter, and butter.

Ingredients

4 tabs Salted butter
¾ cup Peanut butter
4 cup Marshmallows
6 cups Crispy rice cereal

 

Method

  1. Spray an 8"x 8" for bars casserole dish with nonstick cooking spray.
  2. In a sauce pan, melt butter on low heat.
  3. Don’t want burned or brown butter here.
  4. Once butter has melted, keep heat on low and add mini marshmallows.
  5. Once marshmallows begin to soften and melt, add peanut butter.
  6. At this point, you will need to constantly stir the mixture so the peanut butter does not burn and the marshmallows can evenly melt.
  7. Once, mixture is combined and melted, turn off heat and remove pan from stove.
  8. Add rice krispy cereal to sauce pan and stir until evenly coated with mixture.
  9. Pour mixture into casserole dish.
  10. Spray your hand with some nonstick cooking spray and pat down the mixture until firmly compacted.
  11. Allow 30-45 minutes for treats to set up.
