CHRISTMAS EVE MUSHROOM SOUP

This is so creamy mushroom soup

Ingredients

½ cup Mushrooms
Salt
Black pepper
2 tabs Flour
3 ½ cups Hot water
3 quarts Chicken stock
1 cup Rinsed and drained pearl barley
1 tabs Parsley, coarsely chopped
2-cup Sour cream

 

Method

  1. Rinse the dried mushrooms thoroughly under running water, pour warm broth in a pot and leave to soak, preferably overnight.
  2. Meanwhile, fry the finely chopped onion in oil, then add the peeled and grated carrot and fry it for about 2 minutes, then the peeled and diced potatoes and herbs. Stirring every now and then, fry for about a minute.
  3. Pour the soaked mushrooms together with the broth into the pot. Boil them over high heat, season with salt and pepper. After boiling, reduce the heat and, while stirring, cook, covered, until tender.
  4. Leave the soup off the heat and mix it with parsley and cream. Ready!

 

CHRISTMAS LIGHT CUPCAKES

Ingredients

1 ½ cup All-purpose flour
¼ cup Unsweetened cocoa powder
1 ¼ tsp Baking soda
½ tsp Salt
¾-cup Granulated sugar
1 large Egg
2 tsp Vanilla extract
¾ cup Milk of choice
½ cup Salted butter, melted
Frosting
½ cup Salted butter, softened
½ cup Cream cheese, softened
2 ½ cups Powdered sugar
1 tabs Vanilla extract
Decorations
Black icing gel
Mini m&ms chocolate

 

Method

 

  1. Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
  2. In a medium bowl, mix the flour, 1/4 cup cocoa powder, baking soda and salt. Set aside.
  3. Cream together the sugar and the egg. Add in the vanilla, milk and butter until fully combined. Slowly add in the dry ingredients to the wet ingredients until fully incorporated.
  4. Divide the batter evenly into the prepared muffin pan, and bake in the preheated oven for 15-18 minutes, or until a toothpick inserted comes out clean.
  5. To make the frosting: Cream together the butter and cream cheese on high until light and fluffy. Reduce the speed, and add in the icing sugar and vanilla. Mix until fully incorporated. Place in a ziplock bag or a piping bag, and pipe the frosting onto the cupcakes.
  6. Decorate the cupcakes with the black icing gel and m&ms to make it look like Christmas lights.
