QUINOA AVOCADO SALAD RECIPE

A healthy and light meal that keeps you fuller until your next meal. It is also a great snack to add to your weight loss plan.

Healthy and tasty dish to enjoy with the whole family!

REQUIRED INGREDIENTS

3 tbsp, Lime juice

2 tbsp, Coconut oil

¾ tsp, Garlic powder

½ tsp, Salt

 ¼ tsp, Ground pepper

3 cups, Quinoa, (cooked & cooled)

2 medium, Avocados, (chopped)

1 cup, Tomatoes, (halved)

1 cup, Cucumber, (diced)

½ cup, Fresh cilantro (coriander/danya leaves), (chopped)

1, Spring onion, sliced

METHOD

Whisk lime juice, oil, garlic powder, salt and pepper in a medium bowl.

Add quinoa, avocados, tomatoes, cucumber, cilantro and spring onion.

Stir gently until combined.

Refrigerate & serve.

YOGURT PARFAIT TOAST RECIPE

A tasty, light, and scrumptious meal to enjoy after an intense yoga session.

Prep Time: 15 mins

Cook Time: 07 mins

Serves: 4

Delicious spread or side to kick start your day.

REQUIRED INGREDIENTS

2 cups, Strawberries, (quartered)

3 tbsp, Chia seeds

1 tbsp, Honey

1 tbsp, Lemon juice

1½ cups, Plain Greek yogurt

1 tsp, Vanilla essence

4 slices, Bread (Toasted)

½ cup, Peanut butter

METHOD

Place the strawberries in a saucepan and cook over medium heat until they begin to break down about 5 minutes. Mash into a chunky puree.

Stir in chia seeds, honey and lemon juice and cook for another 2 minutes.

Remove from heat and let cool for at least 1 hour to thicken.

In a small bowl, combine yogurt and vanilla. Spread 2 tablespoons of peanut butter on each slice of toast.

Layer on vanilla yogurt and strawberry jam.
