THE BEGINNING OF THE HOLY MONTH!

Ramadan is the ninth month in the Muslim lunar calendar also known as the month of fasting. Ramadan is just a few months away and just like every year, people are anxiously awaiting the month of blessings and forgiveness.

Here are a few Ramadan special recipe ideas to begin a fantabulous festival with Kugans.

CAULIFLOWER FRITTERS RECIPE

Crispy Cauliflower Fritters. Easy to prepare and delicious to indulge during Iftar snack time.

Prep Time: 10 mins

Cook Time: 30 mins

Serves: 8

A simple and healthy snack to enjoy with the whole family.

REQUIRED INGREDIENTS

1 head of Cauliflower

1, Egg

1, Garlic clove, minced or pressed,

A few grates of lemon zest

3/8 cup, Feta cheese

¾ cup, All-purpose flour (add more as needed)

¾ tsp, Salt

½ tsp, Baking powder

¼ tsp, Red chili flakes

METHOD

In a pot of simmering salted water, cook the cauliflower until tender, about 5-6 minutes. Drain well and lay out on paper towels and dry as much as possible.

In a large bowl, whisk together egg, garlic, and lemon zest. Add the cauliflower and mash until it's broken up and the pieces are about the size of a pea. Add the feta and mix.

In a small bowl, combine the flour, salt, baking powder, and red chili flakes. Sprinkle over the cauliflower and gently mix until combined. If very crumbly and not holding shape, add more flour. Chill in the fridge for about an hour.

Heat a cast-iron skillet over medium heat. Add 2-3 tbsp of oil. Drop a couple of tablespoons of batter and press down with the back of a spoon to form a patty. Once browned, flip and cook the other side. Once down, transfer to a plate lined with a paper towel.

AFGHANI MEAT KARAHI RECIPE

Delicious curry is great to enjoy with jeera and ghee rice.

Prep Time: 15 mins

Cook Time: 45 mins

Serves: 5

A tasty side to indulge with rice and flat-breads.

REQUIRED INGREDIENTS

500 gms, Lamb meat small pieces    

4, Tomatoes (cubed)

3-4, Green chilies (chopped)

Fresh coriander for garnish

1 tsp, Salt

½ tsp, Black pepper, crushed  

4 tbsp, White vinegar  

1 tbsp, Ginger (minced)

¾ tsp, Garlic (minced)

¼ cup, Oil

½ tsp, Whole black pepper

1 tbsp, Whole coriander seeds  

1 tbsp, Whole cumin seeds  

2, Whole dry red chili  

METHOD

In a bowl add fresh minced ginger, garlic, and white vinegar, salt, crushed black pepper, oil. Mix well.

Marinate meat in this mixture for 2-3 hours.

Dry roast whole cumin seeds, whole coriander seeds, whole black pepper, and dry red chilies.

Crush it. Set aside. Do not crush it finely.

Cut tomatoes, green chilies, and fresh coriander.

Heat a pan add oil, add marinated meat, stir on high heat for 5 minutes.

Now on low heat with the lid on cook it for 30 minutes. Stir in between.

After 30 minutes add chopped tomatoes.

Again with the lid on cook it for 30 minutes. Stir in between.

After 30 minutes turn the heat to high, add chopped green chilies, salt, and roasted crushed spices made in beginning.

On high heat stir it until all juices evaporate.

Garnish with fresh coriander.

Serve hot!.

CREAM PUFFS (CHOUX PASTRY) RECIPE

Cream puffs are lip-smacking, versatile, and classic desserts to try during Iftar. 

Prep Time: 15 mins

Cook Time: 35 mins

Serves: 16

Fantastic pastry to satisfy your sweet cravings!

REQUIRED INGREDIENTS

200 ml, Water  

4 tsp, Caster sugar  

85 gms, Unsalted butter  

115 gms, Plain flour  

 A pinch of Salt  

3, Eggs (half more if needed)

300 ml, Fresh cream beat with 3 tbsp sugar.

Icing sugar for dusting

METHOD

Preheat the oven to 200C/400F.Place a small baking tin at bottom of the oven to heat.

Sift plain flour with a pinch of salt. Set aside.

Turn on the heat. Stir until butter melts.

When butter melts completely, turn the heat to very low and add sifted flour with a pinch of salt, all at once. Now stir it.

Stir it until a smooth ball formed, once the mixture comes away from the sides of the pan. Transfer this to a large bowl.

Let it cool for 5-6 minutes, or until all steam finish.

Now beat 3 eggs, add them in this mixture 1 by 1. And beat the mixture with a spoon.

Now fill this in a piping bag.

Place silicone sheet or butter paper on a baking tray. Drop this choux pastry better on it. Keep 2-3 inch space in between.

Gently rub the wet finger on top of each ball this will help to make crisper top.

Place the baking tray into the oven. Pour half cup of water in the baking tin you place earlier in the oven bottom. Then quickly shut the oven door. This helps to create more steam in the oven and make the pastry rise better. Bake for 25-30 minutes or until golden brown, if you will not bake them until golden brown and they are pale, they become soggy when cool.

Remove from oven, turn the oven off, and shut the oven door. Take a toothpick, prick the bottom of puffs. Place them again in the off oven having holes facing upwards for 5 more minutes. The warm air of the hot oven will help them to dry in the middle.

Let them cool for 10 minutes, now cut them from the middle, and fill the bottom part with slightly sweetened fresh cream. Cover with the upper part.

Dust with icing sugar.

Serve.
