VEGETABLE SALAD

Ingredients

2 cups Mixed greens (spinach, arugula, and/or lettuce)
1 cup vegetables, chopped (carrots, cucumbers, bell peppers, cherry tomatoes, and/or radishes)
¼ cup Fresh herbs, chopped (parsley, cilantro, and/or basil)
¼ cup Nuts, chopped (almonds, walnuts, and/or pecans)
¼ cup Feta cheese, crumbled
2 tabs Olive oil
1 tabs Lemon juice
1 tabs Honey
Salt and pepper, to taste
 

Method

  1. Rinse and dry the mixed greens and place them in a large salad bowl.
  2. Add the chopped vegetables, fresh herbs, nuts, and crumbled feta cheese to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  4. Drizzle the dressing over the salad and toss to combine.
  5. Serve immediately.
  6. You can also add other ingredients to this salad, such as grilled chicken or tofu, avocado, or roasted sweet potato. Enjoy!
