INGREDIENTS:
For the Kottu Base:
6–7 Godhamba Roti, cut into thin strips
1 cup cooked Chicken, Soya chunks
1 Onion, finely sliced
2 Green Chillies, chopped
1 cup Mixed Vegetables – Carrot, Cabbage, Leeks, and Capsicum
2 cloves Garlic, minced
1 tsp Ginger, minced
2 tbsp Soy Sauce
1 tbsp Tomato sauce
1 tbsp Chilli sauce (adjust spice level)
1 tsp Curry powder
½ tsp Turmeric powder
Salt to taste
2 tbsp Oil or Butter
Fresh Coriander Leaves or Spring Onions, chopped (for garnish)
½ cup Chicken Curry Gravy
2 tbsp Thick Coconut Milk
TASTE THE ISLAND HEAT!
INSTRUCTIONS:
1. Prepare the roti:
Slice godhamba roti into thin pieces or small squares. If freshly made, let them cool slightly before chopping.
2. Stir-fry the veggies:
Heat oil in a large wok or flat pan.
Add onions, garlic, and ginger — sauté until golden and fragrant.
Add green chillies and vegetables; stir-fry for 2–3 minutes until slightly soft.
3. Add protein & spices:
Add your choice of chicken, tofu, or soya chunks.
Mix in curry powder, turmeric, soy sauce, tomato sauce, chilli sauce, and salt.
Stir well until everything is evenly coated and sizzling.
4. Add the roti:
Toss in the chopped roti pieces.
Pour in optional curry gravy or coconut milk for extra flavour.
Mix and chop everything together in true street-food style — tak tak tak!
5. Finish & serve:
Adjust seasoning to taste.
Garnish with coriander or spring onions.
Serve hot with lime wedges and spicy curry or devilled side dishes.
TIPS
For vegetarian kottu, use tofu or soya chunks and vegetable curry gravy.
For a spicy kick, add crushed pepper or chilli flakes while frying.
