INGREDIENTS:
1. For the Lamprais Rice
2 cups Basmati Rice
2 tbsp Ghee
4 Cardamom Pods
4 Cloves
1 Cinnamon Stick
1 Bay Leaf
1 tsp Salt
3 cups Water

2. Mixed Meat Curry (Chicken + Beef/Pork)
500g Mixed Meat (any preferred combo)
1 large Onion (sliced)
2 tsp Ginger-Garlic Paste
2 tsp Roasted Curry Powder
1 tsp Chili Powder
1 tsp Turmeric
1 tsp Pepper
Salt to taste
2 tbsp Oil

3. Ash Plantain
250g ash Plantain
1 Onion
1 tsp Turmeric
1 tsp Curry Powder
½ tsp Mustard Seeds
Curry Leaves
Salt
1 cup Coconut Milk

4. Seeni Sambol
3 large Onion (thinly sliced)
1 tsp Chili Flakes
1 tbsp Sugar
1 tbsp Tamarind Juice
Salt
1 tbsp Oil

5. Frikkadel (Meatballs)
Onion  (finely chopped)
1 Green Chili
1 tsp Pepper
1 slice Soaked Bread
Salt
Oil for frying

6. Banana Leaves
Cut into Squares
Washed and slightly heated to soften

HOMEMADE GOODNESSRecipesINSTRUCTIONS:
1. Prepare the Rice

Heat ghee in a pan.
Add cardamom, clove, cinnamon, and bay leaf.
Add washed rice and sauté lightly.
Pour in stock, add salt, and cook until fluffy.
Set aside.

2. Make the Mixed Meat Curry
Heat oil and sauté onions until soft.
Add ginger-garlic paste and spices.
Add meat and fry until sealed.
Pour in coconut milk and simmer until thick and well cooked.
Reduce until gravy clings to the meat (semi-dry).

3. Ash Plantain / Eggplant Curry
Fry mustard seeds and curry leaves.
Add onions and sauté.
Add plantain/eggplant, turmeric, curry powder, and salt.
Add coconut milk and cook until tender and thick.

4. Seeni Sambol
Heat oil and fry onions until caramel brown.
Add sugar, chili flakes, and tamarind.
Cook until sticky and dark.

5. Frikkadel (Meatballs)
Mix minced meat with onion, green chili, pepper, soaked bread, salt, and egg.
Shape into small balls.
Fry until golden.

6. Blachan
Mix shrimp paste with chili powder, salt, and lime juice.
Keep aside.
