EASY TAMIL SAMBAR RECIPE - COMFORT FOOD MADE SIMPLE

INGREDIENTS:
FOR THE SAMBAR:
½ cup Toor Dal (pigeon peas), rinsed
1½ cups Water (for pressure cooking dal)
1 small Onion, sliced
1 small Tomato, chopped
1 cup Mixed Vegetables (Drumstick, Carrot, Brinjal, Okra, etc.)
1 tsp Tamarind Paste (or a small lemon-sized tamarind soaked in warm water)
1½ tsp Sambar Powder
¼ tsp Turmeric Powder
Salt to Taste
2–3 cups Water (adjust for consistency)
Fresh Coriander Leaves (for garnish)
FOR TEMPERING:
1 tbsp Oil or Ghee
½ tsp Mustard Seeds
½ tsp Cumin Seeds
1 dried Red Chilli
A pinch of Asafoetida (hing)
1 sprig Curry Leaves
EASY SOUTH INDIAN SAMBARINSTRUCTIONS:
1. COOK THE DAL
Pressure cook the toor dal with turmeric and 1½ cups water for 3–4 whistles until soft. Mash and keep aside.
2. COOK THE VEGETABLES
In a pot, add the chopped vegetables, onions, tomatoes, sambar powder, salt, and a little water. Let it boil until the veggies are tender.
3. ADD TAMARIND & DAL
Add tamarind extract to the pot. Boil for 5 minutes to remove raw smell. Then add mashed dal and more water as needed. Simmer for 5–10 minutes.
4. PREPARE THE TEMPERING
Heat oil or ghee in a small pan. Add mustard seeds, cumin seeds, red chilli, curry leaves, and asafoetida. Let it splutter.
5. COMBINE & SERVE
Pour the tempering over the sambar. Mix well and garnish with coriander leaves. Serve hot with rice or idli/dosa.
TIPS:
Adjust sambar powder and tamarind for your taste.
Add a pinch of jaggery for a hint of sweetness (optional).
