MEDHU VADAI RECIPE - CRISPY SOUTH INDIAN LENTIL FRITTERS

CRISPY MEDHU VADAI AT HOMEMedu VadaMedhu Vadai, also known as Urad Dal Vada, is a popular South Indian snack made from soaked urad dal (black gram), seasoned with spices, and deep-fried until golden and crispy on the outside, soft and fluffy inside. Perfect with coconut chutney and sambar!

INGREDIENTS:
1 cup Whole Urad Dal (skinned black gram)
2–3 Green Chillies, finely chopped
1 tsp Ginger, finely chopped
10–12 Curry Leaves, chopped
1 small Onion, finely chopped (optional)
2 tbsp Coriander Leaves, chopped
1/4 tsp Black Pepper (optional)
1/2 tsp Salt (adjust to taste)
Oil – for deep frying
Water – for grinding and shaping

INSTRUCTIONS:
1. Soak the Urad Dal
Rinse and soak urad dal in water for 4–6 hours.
Drain water completely before grinding.

2. Grind to a Smooth Batter
Grind soaked dal in a wet grinder/blender with minimal water (just enough to blend).
Batter should be thick, fluffy, and smooth.
Whisk the batter well to incorporate air and make it lighter.

3. Add Spices & Herbs
Mix chopped green chillies, ginger, curry leaves, coriander, pepper, onion (optional), and salt into the batter.

4. Shape the Vadas
Wet your hands, take a small portion of batter, and shape into a ball.
Flatten slightly and poke a hole in the center (classic doughnut shape).

5. Deep Fry
Heat oil in a deep pan over medium heat.
Slide the vadas gently into hot oil.
Fry until golden brown and crisp on both sides.
Drain on paper towels.
