INGREDIENTS:
1 cup Fresh Grated Coconut (or frozen, thawed)
2 tbsp Chana Dal (dalia)
1–2 Green Chilies (adjust to taste)
½ inch Piece of Ginger
Salt to taste
¼ cup Water (adjust for consistency)

For Tempering:
1 tsp Oil
½ tsp Mustard Seeds
½ tsp Urad Dal
1 dried Red Chili
A few Curry Leaves
A pinch of Hing (asafoetida)

INSTRUCTIONS:
1. Blend the Chutney
In a blender, combine coconut, roasted chana dal, green chilies, ginger, salt, and water.
Blend to a smooth consistency. Adjust water for desired thickness.

2. Prepare the Tempering
Heat oil in a small pan.
Add mustard seeds and let them splutter.
Add urad dal, red chili, curry leaves, and hing. Fry for a few seconds until aromatic.

3. Combine
Pour the tempering over the chutney and mix well.
