INGREDIENTS:
2 cups Idli Rice
1 cup Urad Dal (split black gram, skinless)
1 tsp Fenugreek Seeds (optional)
Salt to taste
Water, as needed
Oil or Ghee for greasing idli molds
INSTRUCTIONS:
1. Soak:
Rinse rice and urad dal separately.
Soak rice with fenugreek seeds and urad dal in separate bowls for 4–6 hours.
2. Grind:
Grind urad dal to a smooth, fluffy batter using minimal water.
Grind rice to a slightly coarse batter.
Mix both batters together in a large bowl. Add salt and mix well.
3. Ferment:
Cover and let the batter ferment in a warm place for 8–12 hours or overnight, until it doubles in volume and turns slightly bubbly.
4. Steam:
Grease idli molds with oil or ghee.
Pour fermented batter into molds (don’t overfill).
Steam in an idli steamer or large pot with a lid for 10–12 minutes on medium-high heat.
Check doneness by inserting a toothpick—it should come out clean.
