INGREDIENTS:
White Sesame Seeds – 1 cup
Jaggery – ¾ cup (grated or powdered)
Cardamom – 2 pods (powdered, optional)
Water – 2–3 tbsp
INSTRUCTIONS:
1. Roast sesame seeds
Heat a pan, dry roast the sesame seeds on medium flame until they splutter and turn slightly golden.
Transfer to a plate and let them cool.
2. Make jaggery syrup
In the same pan, add jaggery with 2–3 tbsp water.
Boil until it reaches soft ball stage (drop a little syrup in water – it should form a soft ball that you can roll).
3. Mix & shape
Add roasted sesame seeds and cardamom powder to the hot jaggery syrup.
Quickly mix well.
Grease your palms with a little ghee/oil and shape into small balls while still warm.
TIPS
If the mixture hardens, warm it slightly to soften before rolling.
Can be stored in an airtight container for up to 2 weeks.
